- The look of coffee
Before tasting, let's look at the coffee. There should be a so-called crema on the surface, that is, a dark-colored foam. Dense foam, on the surface of which sugar rests calmly, is a sign of a good drink. But too light foam or a very thin layer of it can indicate a low-quality portion of coffee.
- Aroma
It's time to feel the aroma of our coffee. 70% of our impression of coffee is the aroma itself, so let's pay attention to this stage. First, note the intensity of the aroma. Second, try to catch exactly what notes you feel.
Tip: Hold the cup to your nose and stir the foam. It keeps the aroma molecules inside, and if you break it, you will release them into the air.
- Taste
Note what tastes you feel, starting from the basic ones: acidity, bitterness, sweetness. After that, try to specify: if acidity, then what exactly. Maybe you can feel the taste of lemon, and maybe berries. The same with other flavors.
- Aftertaste
So you swallowed your coffee. Do not rush to drink it with water. Pay attention to the aftertaste you feel. It can give new taste notes, different from those that were in the drink at first. The aftertaste can last 10-20 minutes, you can feel notes of caramel, chocolate, spices, smoke, fruit, etc.
